Straightforward Choice: Springtails
Folsomia candida (Common White Springtails) - One of the best cleanup crew springtails. Very fast breeding and effective cleaners that spend much of their time below ground.
Advanced Ecosystem: Springtails
Maximize biodiversity: Mix Ceratophysella isabellae, Lepidocyrtus sp, Thalassaphorura encarpata, etc. See the full species information list for picking additional springtails and to learn which environmental niche each species specializes in.

Quantity
Snail enclosure size varies widely by species, but using a 10 gallon enclosure as an example, as few as 50 springtails per species could seed the enclosure. For the 10 gallon example I recommend ~300 springtails if they are needed immediately. You can get away with starting with fewer isopods or springtails in the environment and still have the main inhabitants, but it will take a while for the CuC to start performing their duties effectively.
Crucial Information
Do not keep isopods with snails! Isopods can disturb or chew on resting snails and can grow into very high populations in terrestrial snail environments.
Additional Information
Snails produce a lot of waste which serves as food for springtails. Springtails may grow into high populations in a snail enclosure, and the very fast breeding species Pseudosinella violenta could grow into an overwhelming population size.
